I created this recipe yesterday in honor of National Pumpkin Day! Whoop whoop! Â What a way to celebrate, and guilt-free I might add! There is a TON of protein in these blonde beauties, creamy pumpkin pie flavor and a healthy dose of ground flaxseed. I had one before bed last night and it was the perfect late night snack. đ

Ingredients:
1/2 cup oat flour
2 large scoops vanilla whey protein powder (64g)
1/2 cup Stevia in the Raw
3/4 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon
3/4 cup pumpkin puree
1/4 cup fat-free Greek yogurt
1 TBSP ground flaxseed
3 TBSP cold water
2 TBSP unsweetened almond milk (or low-fat milk)
1/2 teaspoon vanilla extract
1/2 cup organic white chocolate chips (optional)
Directions:
1.) Preheat oven to 350 degrees. In a mixing bowl combine first six ingredients (dry, except flaxseed).
2.) In a separate bowl combine all wet ingredients, including flaxseed. Mix well. Add wet mixture to dry mixture and stir until batter is smooth.
3.) Fold in white chocolate chips. *I put half in the batter and half on top.
4.) Pour batter into a lightly greased, 8 X 8 inch baking pan. Bake at 350 degrees for 15-18 minutes or until the center is firm to the touch.
5.) Let cool for 15-20 minutes and serve.
